Hello everyone! My mission is simple: to empower the diabetic community through great food, informed conversation and inspired health.
For many years, I worked as an award winning Executive Chef in healthcare: transforming food programs from the stereotype of monotone, bland meals to foods full of color, flavor and the appeal experienced in the classiest of restaurants.
My life and relationship with food changed when I was diagnosed with uncontrolled Type 2 diabetes in 2018. Suddenly, my entire livelihood was in question. I became determined to redefine the role of food in my life, both personally and professionally.
In hindsight, my diagnosis changed everything for me for the positive. After successfully managing my condition through diet and exercise without the use of medication, I decided to help others with similar circumstances and challenges while advocating for the diabetic community.
I am living my best life because of my condition and want to bring you along journey. I want share my story and culinary expertise supporting the diabetic community with recipes, videos, podcasts, blogs and other media. I look forward to building this community with you!
I am a Registered Dietitian with a Bachelor’s degree in Nutrition & Dietetics. I graduated, with honors, from Dominican University in 2014. I have provided nutrition care & counseling to patients and families with varying levels and complexities of medical conditions for the past six years.
I love immersing myself in the care of my patients, but I absolutely love public speaking & teaching nutrition to people of all ages. Some favorite examples are the Girl Scouts, helping them earn their Healthy Snack Badge, speaking at the Leading Age Illinois Annual Conference and being quoted in McKnight’s Senior Living Magazine!
What I love most is being able to teach others, advocate nutritionally and inspired healthy lifestyle changes, and helping others feel the best that they can through the foods that they eat!
In my personal time I love to be outdoors, enjoying nature. You can almost always catch me hiking or out on the water kayaking!
